Description
Willett Pot Still Reserve is a small batch straight bourbon whiskey. It is thought that the company has transitioned the Pot Still Reserve Straight Bourbon to use 100% in-house distillate [6]. Prior, it had been sourced from another distillate that was about 8–10 years old, rumored to be from nearby Heaven Hill Distillery [6]. It is labeled a straight bourbon without an age statement, the liquid inside each bottle must have aged for at least four years in new charred oak barrels [6].
Tasting Notes
The flavor profile of Willett Pot Still Reserve combines notes of cherry, fresh figs, citrus, honey, vanilla, oak, barrel funk, baking spices, dusty leather, boiled peanuts, mint, caramel, dark chocolate, peanut brittle, thyme, and dill [6]. The finish is long and complex, with a complex sharpness that swirls around the palate as the last sip dissipates [6].
